Amazon.com Review "Gourmet raw cuisine"--if that sounds like an oxymoron, you'll be amazed by the creativity of the recipes in this book. Every food is "live" (uncooked) in these vegetarian recipes from Juliano, the raw-food guru of Los Angeles. Juliano believes that fruits, vegetables, nuts, grains, beans, and seeds in their rawest and purest form are the most nourishing foods. If your imagination stops at alfalfa sprouts and grated carrots, hold onto your cutting board. Juliano's recipes include Butternut Squash Soup, New Moon Fruit Stew, Thai Green Papaya Salad, Living Buckwheat Pizza Crust, Mango Essene Bread, Mock Salmon Sushi, Raw Spring Rolls, seven varieties of burritos, nine varieties of pizza, and nine unusual smoothies. Desserts? Try EZ Pudding (made with maple syrup, avocados, and carob powder) or Cashew Gelato (cashew butter, maple syrup, and almonds, served frozen). There are also condiments, dressings, and sauces, and plenty of information about preparing raw foods, including how to soak and sprout beans, grains, seeds, and nuts. It may seem like cheating, but a food dehydrator is permitted to "bake" pizza, cookies, and breads. It blows hot air, but never heats foods hotter than 120F, which, claims Juliano, "allows all the delicate nutrients that are usually burned out of cooked foods to remain intact." Raw is filled with gorgeous color photos of the foods in all their vibrant colors and a number of photos of the vibrant Juliano (not in the raw). "Before you know it," says Juliano, "you'll be Raw and loving it." --Joan Price

AWESOME BOOK!!!! November 24, 2008 This is a great book. I just got my dehydrator and can't wait to make the healthy bread!
Rawtizmo October 20, 2008 Haha... okay... some of these low rating reviews are on point... a future edited version would benefit from these sections... but for a more-or-less groundbreaking work-- it *was* one of the first, and certainly the first of its kind (loud, colorful, exciting), raw foods cookbooks, it deserves credit as a classic. And like all the raw cookbooks, there are plenty of good *ideas* in here, even if you're not a "raw foodist." Hey... my *Mom* opened it up and was drawn in... don't diss it too hard... Style over substance October 1, 2008 0 out of 1 found this review helpful
This book was highly recommended to my by an acquaintance and I made the mistake of purchasing it without examining it. This is a "celebrity" cookbook in the worst sense of the term. The front cover lists the author by the single name, "Juliano", as if that should suffice for identification. Then, I counted 8 photos of Juliano in the book (excluding the dust jacket). This guy has a very creepy persona in my opinion.
If a script writer needs inspiration for a stereotypical empty headed California raw food chef they need look no further than the words of wisdom that Juliano delivers (apparently in all seriousness).
The recipes are complex and often involve being referred to one or more other recipes in the book. So, layer upon layer of complexity. This is gourmet raw food more than everyday raw food.
I certainly wouldn't recommend this to newbies or to anyone looking for raw food information or everyday recipes. If you need inspiration or recipes for gourmet raw food then this book may be of interest.
Beautiful but lacking! June 13, 2008 1 out of 1 found this review helpful
I got excited looking through this book at the beautiful possibilities of totally raw meals. It was my introduction to the raw food world. However, I have only made two things from it, and it has sat on the shelf unused. I bought two other books which I am pleased with and use all the time (ani's raw kitchen and jennifer cornbleet's raw food made easy). The idea of creating the foods Juliano presents in his book is nice, but executing the production of them is another thing. All the recipes call for a long list ingredients, some I've never heard of, and the glossary doesn't offer any help with vague definitions. Most recipes make you incorporate a couple other recipes into them, sometimes those recipes have another recipe in them. It gets overwhelming quickly. Maybe after a few more months of experience with raw prep I will return and give this another try. His odd collection of pictures of himself is humorous but doesn't add anything to the book.
LOVE it! June 5, 2008 1 out of 1 found this review helpful
I had checked this book out at the library way too many times and finally decided to buy. It has tons of awesome recipes. It may seem a bit extravagant if you are not an experienced raw foodist as many ingredients are unusual to the average American. My faves so far: fried rice, carrot cake, house dressing, water.
